Are you trying to cut back on the amount of pasta you eat? Here is a great substitute that provides you with additional health benefits plus the satisfaction of eating healthy while fulfilling your pasta cravings.

Zucchinis are a mild, versatile vegetable that can be added into many of our daily foods without changing the taste: oats, soups, salads, baked goods and as a substitute for pasta. Zucchinis are a part of the summer squash family, are low in calories due to their high water content, and give us added potassium, carotenes and vitamin C.

To use zucchini as a pasta all you need is a spiralizer to cut them into long, thin slices resembling spaghetti.

Once you have your zucchini sliced you can decide whether you want them cold and crisp or warm and soft. To warm them, add a little oil to a pan and sautée them for 1 -2 minutes. I prefer them cold topped with a hot sauce, which then warms the zoodles. You can use any pasta sauce you like to top off your zoodles, below I used a tomato meat sauce topped with mozzarella cheese. Give it a try, you’re going to love it.
